Whenever I take a bite of these, there will always be a part of me that’s a kid, sitting at the table with my family, fighting over who gets a double this round.
Corn cakes! A tradition in my family - my grandfather made them for his kids, my dad made them for us. Basically just enough egg and bisquick to hold together the corn into little pancakes. Sweet and salty, idyllic summer breakfast!
