I have decided that I am going to make bagels for the first time. Surely this will end well and not in tears.
While my dough proofs in the Instant Pot, I need to decide whether to boil or steam the bagels. If I steam, then I get to use a trivet, but it will take longer as I probably can only steam 3 at a time.
Also, I know I should have bought salmon at the grocery store this morning, but I have a lot of cream cheese to deliciously spread.

bryantpark.org[Bagelwars] I very much prefer Montreal bagels. The New York ones are okay too, but they seem no different from a doughnut-shaped bread. It's also shown by the fact that they are all about the topping. The more creamy, flavourful deliciousness you pile on them, the better.
In contrast, the Montreal bagels are best enjoyed with a subtle topping. A touch of butter and cheddar cheese, or peanut butter and bananas. Actually, I lived not far from Saint-Viateur street, and many times -- cycling home from a bar or a party -- I stopped there to get a bag of bagels. I ate them plain and fresh as they come out of the oven, and they were excellent.
That brings me to my point. Now that I am visiting Montreal again, I had the chance to do some comparisons. Most Montreal-style bagels are very good. But Saint-Viateur bagels are head and shoulders above the rest with their crunch, pure taste and decades of honing the perfect process and recipe.
If you're ever in Montreal, get a bag of St-Viateur sesame bagels, cut them in half, toast them until they're light brown, then apply topping. Welcome to bagel heaven!
I don't think I've ever had anything from one of @cardamomaddict 's suggested restaurants which has done me a bad turn, and that applies in spades to Poppy's in Waterloo. I could barely finish half this Reuben bagel this evening, and the lox one -- and the remainder of this -- should keep me happily fed tomorrow.
Well, today.
Homemade and absolutely delightful, the bakery has some night hours from 11:30 PM on Friday and Saturday, possibly owing to its proximity to Wilfred-Laurier. Whatever the reason, I was glad indeed to fill my gullet after a long night, and with a fantastic sandwich at that.
Now I just have to try their beet salad.
@ai6yr Steak dinner comin’ up next weekend. As for this morning, we have a brand-new “not just good, but legit freaking great” #bagel shop that just opened around the corner from us in far north Dallas. Yeah, you read that right — New York bagels in #Dallas (n.b.: it ain’t the water, it’s the recipie & the technique). We bought Mom an everything bagel and olive cream cheese which we haven’t been able to find locally here in a decade. Happy wife, happy life!
