I’m trying a new finger crimp on my quiche’s pie shell. It’s called the Sunflower Crimp. I learned it from Erin McDowell. She authored The Book on Pie. This crimp is her classic finger crimp plus an extra step.

@amwaters Fancy 😊 Do you have to do anything special to prevent the pointy bits from over-cooking? Or does that happen?

@MichaelPorter I’m about to find out! First time trying this crimp. I do something similar and although not so pointy and it has been fine.

@MichaelPorter here is the sunflower crimp from today. No issues with the tips getting too dark.
