Koshari is a really good dish I'd never tried before. It's apparently Egypt's national dish, and it's 100% vegan. Carb-heavy, with lentils, rice, pasta, and chick peas - plus some delicious crispy fried onions. Here's the recipe I used, mostly straightforwardly.
