So confused about this platform though. Are different instances completely separate? Do we only talk quantum here and keep it separate from our other interests?

Welcome! You can talk across instances (I'm on a different instance) like you can with something like email (e.g. Gmail vs Hotmail). Different instance have different pros/cons and you can always migrate later (and keep followers automatically).
Also, talk about anything and add hashtags if you want to be more easily seen outside your local instance
