I think that's really just because 330 have been tested. The map they link to states:

"No matter the country or continent, if species are tested for PFAS contamination, these harmful chemicals show up – where you look for PFAS, you’ll find it."

I'd be frankly surprised to find any species without any PFA contamination on the planet at this point. I can't find reference to one.
