Well, made layered green chili chicken & cheese enchiladas for dinner again. Mom wasn't thrilled, but I am working on the sauce recipe & I still had corn tortillas that don't keep forever, so

Sauce still isn't quite there. Didn't have enough kick to suit me, and I like it mild. It was just...bland. Not bad, but also not wonderful. So, going to have to work on it. More cumin, salt, & oregano. Some California & a jalapeno for more complexity.

@giascott maybe it needs a bit of sharpness -- lime juice or vinegar? Or tomatillos which have a nice lemony taste.

@Hortense It does have plenty of tomatillos, but maybe some lime juice would add more complexity
