We do have some problems seasonally. The problem though isn't the existence of nitrogen its the way concentrated chemical fertizers are used. Think of it like vitamin supplements. The best way to get the vitamins you need is through whole foods as your body is generally able to process nutrients in those quantities. Most vitamin supplements are more than what you can actually process which results in a lot being excreted through urine. Most people who've taken different supplements will notice a difference in the smell of their piss. The same happens with chemical fertilizer, but it results in more nutrients being available for algae and bacteria in rivers which can damage the ecosystem.

There are different ways to farm. Not all farms use chemical fertilizer. You can focus on soil health which generally results in material staying put instead of running off and being used up in the future growth. The problem is that those practices are much harder to scale up. I argue scale is our primary problem. We always seek to attain greater and greater scale with everything we do instead of reproducibility and simplicity of design.
