I know it is a bit too late for New Years Eve #cocktail suggestions, but here is my champagne cocktail rundown for my New Years celebration.
1. Champagne cocktail. Sugar cube with several dashes of angostura bitters, 3/4 oz cognac, 4 oz champagne. Maraschino cherry and orange slice garnish. Ignore the food. Foods is unnecessary.
2. Campari spritz. 1.5 oz campari, 4 oz champagne, 1 oz club soda. Garnish with and orange slice. Off guests don't like the bitterness of campari, you can do an Aperol spritz instead.
3. Death in the Afternoon. A Hemingway cocktail. 1.5 ounces of absinthe and 4 ounces of champagne. Guaranteed to ring in something.
