Why is body temperature constant at around 36 degrees? Dunitz and Benner provide a potential explanation based on water's viscosity and hydrophobicity: 36 degrees is high enough for low viscosity, low enough so that important hydrophobic molecules don't dissolve easily (Nat 86).
