投票トークの人、基本的にDMしか使ってないので本当にDiscordをおすすめしたい

There are several reasons not to use Matrix.
1. Matrix requires a lot of work to build a server, but Discord does not.
2. Matrix costs money to maintain the service, but Discord doesn't unless you sign up for Nitro or something.
3. Matrix is not used by many people around me, but Discord has users all over the world, making it the best way to communicate.

If you're hosting your own local server, yes- otherwise, it's easy to create a new channel/chat. Discord doesn't allow you to host your own server, so you would be just creating the same thing anyway.

Not sure if we're talking about the same thing- I've never heard of anyone paying to use Matrix.

I suppose since you're trying to target a larger audience, using Discord would be the most sensible option. This last reason is enough in itself to justify not using Matrix- so I guess the previous 2 are moot point anyway. Sorry to have wasted your time.
