@AndresPlazaR cast iron is still probably your best bet if you’re willing to invest the time and effort in the upkeep.

@AndresPlazaR Exactly. A well-seasoned cast iron pan is one of the best non-stick surfaces. Once you get into the practice of deglazing afterwards they're even better.
@aj6xk And it doesn't matter that the surface of the iron has a lot of texture?
