The Specialty Coffee Association says to use 55 grams coffee to 1 liter of 90°C - 95°C water.
(I use 65 grams)
Brew time should fall between 3 and 5 minutes depending on method, fineness of grind, and preference. Ideally, the coffee should have been roasted within the last two weeks, and ground no more than a few hours before brewing.
