I agree with most of what you said ─just one option, Ubuntu-based LTS─, except for Ubuntu's election: I don't think Gnome Shell offers the best transition for a Windows user, and I personally think Linux Mint Cinnamon or Mate (depending on system resources) is friendlier in these situations. And I also think that there's a cutting line in these conversion processes: anyone that cannot deal with an indication like "everythink you find on the web referring to Ubuntu is aplicable to you Linux Mint", is probably not able to even check the web for information about technology, and won't probably be a Linux user for so long unless you offer him/her endless support, so it doesn't really matter the name of whatever you install in his/her computer.
