Today's dinner. Cheese stuffed beef (goat and young Dutch farmers cheese) and then some homemade Mac and cheese with 4 cheeses (young farmer, old farmer, goat, cheddar) and a no carb, no calorie pasta. Literally the best Mac and cheese I ever ate or made.

Best yet. This is DIET food. The whole meal has 3 carbs and almost all of our days calories is this one meal. To eat like this and say I still rocked the diet with really low calorie count is pretty damn epic. 35 lbs lost eating this stuff!

@wowaname We actually are a bit low on supplies so didnt have any. I am on aketo diet (so no carbs) so i really cant eat most greens. usually i add a cup of spinach to my dinner because its the only veggie low enough in carbs. but i cant really eat anymore than that in a day sadly.

@wowaname @freemo It works but it seems that this fellow is doing it quite differently to me.

Our ketogenic diet started as a byproduct of eating Paleolithically, so we still get lots of greens in there!

We do get knocked out of ketosis more often, though.

@DetectiveHyde @wowaname For most overweight people to be in ketosis you need less than 20 grams of carbs. I'd be curious to hear what veggies you can think of that are low enough in carbs that you can eat a days worth of them and still be under 20 grams. I can only really think of cucumbers maybe.

With that said I know if your skinnier or been on keto for a while you can go closer to 50 grams in a day and not break keto. I think at that end of the scale I could fit in way more veggies.

@freemo @wowaname Oh, it's INVERSELY PROPORTIONAL? wow. That's counterintuitive. I always thought the fatter a person was, the more carbs they could fit in before breaking keto.

Mostly we use carrots, green beans, aubergine/eggplant, courgettes and onions.

I actually eat a fair bit of fruit every day too and it doesn't seem to prevent ketosis, but if I overdo it I get knocked out for a day or two.

@DetectiveHyde @wowaname Well yes and no. There are twhree factors that go into your carb limit that I can think of. 1) how many calories you burn in a day 2) how strong your insulin response is 3) your ratio of mitochondria to cells in your body.

WRT to #1 the more you exercise the more carbs you can eat. As long as your burning them off fast enough that you don't replenish your glycogen stores you should remain in ketosis.

#2 means if you have a stronger insulin response your body would probably store carbs more readily then burn them. I'm not 100% on this one but that could play a role.

#3 this is the most overlooked one though. People who are very active and physically fit, or people on keto for a long time, have an increased ratio of mitochondria. This in turn means they can break down sugar faster (and tend to feel more energized as a result).

Obviously fatter people are probably not doing too well on any of those three factors...
