@markusl I wouldn't say text is _always_ better, but, IMHO, technical information videos require a level of editing sophistication to make them engaging that is not always available to hobbyists.
I don't always consume gaming videos, but I watch them sometimes thanks to my nephew. What sticks with me is that most streamers of at least medium size do interact with their audience (even when they become so big that they couldn't possibly read the walls of text, they still try to engage them in the conversation), which is why live streaming seems to me to be naturally suited for gaming videos.
There's also the question of what games are good for streaming and which ones are not. I remember being very entertained by @ChrisWere's TuxKart videos, but not so much by the latest ones.
Finally, about talking heads videos, I believe those need both (at least some degree of) script writing and editing. Unless you're innately funny and/or entertaining, it is very hard to keep someone's attention for more than, say, five minutes just by talking, even if it's a topic the other person is interested in. Most people, including myself as you can see, tend to rumble and that needs to be cut.
Finally, I'm Gen X and I have no education whatsoever on this stuff, so take what I said with a grain of salt.
