I wish I could follow topics on @Mastodon. i.e. not just searching with hashtags or search phrases, but subscribe and have them appear in your timeline automatically.

You can on Qoto as we are a modified Mastodon instance.
Go to settings, Follows & Subscriptions -> Following Hashtags. You can even redirect them to show up in a list timeline instead.
I can recommend checking out the options available here as we do differ from default Mastodon.
