@jonobie You're welcome. I hope it helps. I just wanted to make it clear that knives / edged gadgets are not a simple one-and-done thing. It's a craft that can be fun and interesting. It depends on the material (what kind of steel) and what you want from the knife. What are you cutting? How long do you want the edge to last? What kind of steel is the knife made of?
Are you slicing salmon steaks from a filet or are you chopping carrots for soup? These are entirely different things and one knife cannot do both efficiently. My hope was to communicate that. It's a fascinating field to study.
