It's that they can't understand fedi, but also nobody that knows who to call is making the call. The MyPillowfort guy is a known guy, plus he knows journos to call and he called them. It's really just a matter of that kind of thing, how does a journo know this place and why would they care? How do they find out about it? They care if Trump does it, anything that guy does is news, they care if it's got a budget. The reason the VC-funded startups get press is that all the VC firms know the tech journos (so they know who to call) and by definition there is someone with deep pockets behind their startups (so the journos care).
So, one of the best parts of fedi is that there's no budget required to run an instance: you can use a free subdomain and set it up in your house. There's no analytics or advertising. Journos don't hear about it so they don't know about it. They also don't care because they don't see things like "$3m in funding" or e-celebrities or anyone making money, because no analytics, no ads, nothing.
You could reverse this if you wanted to: find out which journalists to call/email, find a hook (like if it's related to a topic that journalist writes about), they like to have one person to talk to, they like simple answers. I don't think they'd write a very positive story or that most journos would even understand fedi (e.g., "Russians spread misinformation about COVID-19 on a new app called 'Feddeverse Mastodon'") but that's how it goes.
