@JonKramer nice! i chose high stemmed plants because i want them to be more of a long term thing, even if there are pretty nice short stemmed variants too. it's certainly pretty interesting how much know-how mankind has accumulated on grafting and other techniques.
@bonifartius I had/have a neighbor who had a tree farm, he specialized in grafting black walnuts, a variety that could be cracked by hand instead of needing a bulldozer. The way it was done is probably 10s of thousands of years old, and just neat to see done.
I went for full size rather than dwarf trees, because shade. The birds can get the fruit I can't reach, and that's OK with me.
