3 games that blew my mind:
* Super Mario Bros 3 (NES): This game blew my mind at the time, it seemed much more complex than previous platformers, levels were more varied, sprites seemed more detailed, and the game had a serious depth that surprised me! Powerups, different suits for Mario, maps, etc... At the time it was incredible!
* Gran Turismo: This game at the time seemed vast! My impression is that it was a game but also a car encyclopedia. At the time I even thought the future of the motoring press would be virtual like this, I pictured a "magazine" becoming a virtual experience where you would test drive and compare various cars accurately modelled.
* Red Dead Redemption 2: Again this is a game that blew me away with scale and depth. When I discovered that NPCs had houses, jobs, families, etc I could never rob one! I did bad deeds in missions, because I had to progress, but I ended up never robbing anyone.

@trinsec I never played Skyrim, but RDR2 isn't just the open world. The world and NPCs are highly believable compared to most of the games I've played.
