@trinsec You mean with risotto-kind of rice? Agree, it makes it all squishy squashy. Paella should use some more neatly separated rice type
@trinsec well, maybe it's just 'cause I'm Italian but I love risotto in many variations and kinds!
I've seen it done in some less-than-optimal ways abroad, maybe that is your experience? Like overcooking the rice, or not using broth to cook it. Still, I agree, paella is something different, is not a seafood risotto!
