is there a database of vegetables and their growing conditions like when the seeds are planted, when it's harvest time, soil conditions, light conditions?
i'm eyeballing it currently, but things could be optimized with some knowledge :)

Sometimes yes, sometimes no. Maxwell's equations no doubt help reason about electrical and radio things which do actually work, but modern thinking on topics like psychology and economics have little if any demonstrable benefit over past theories, but they do serve well the current political regime.
Until recently, every gardener in the world saved their own seed. And every gardener was, therefore, a plant breeder.
They simply saved the seed of the plants that did best for them, and which they liked most. Although simple, this was efficient.
If things changed so that your cabbages didn’t do well, someone down the road had a slightly different one that would cope. This has worked very well for the past 11,000 years.
