Often, to gain you have to sacrifice speed or user experience. Changing your server is kind of an exception, though. Unless, you have set up your own private server or you live in a region with poor ping to Cloudflare's servers, 1.1.1.1 seems to be the best solution for privacy AND speed. Although, is a huge for-profit company, they get audits annually to prove their statement remains true: no IP logs or other user data trading.

IPv4: primary: 1.1.1.1 secondary: 1.0.0.1
IPv6: primary: 2606:4700:4700::1111 secondary: 2606:4700:4700::1001

For private DNS (in Android): 1dot1dot1dot1.cloudflare-dns.c

If your programs support DNS over HTTPS or DNS over TLS make sure you enable that to encrypt your DNS requests. Firefox and some Android versions do.
