I used to buy gluten by the lb. Add a T or two for each loaf. I don't make bread much anymore so just freshly ground hard red wheat, freshly ground oats, and store bought bread flour.
@sda yea I can also just add generic protein powder too I suppose, should be pretty similar.

Would generic protein powder add to the elasticity of the dough like gluten does, though?
