I'm making some no-carb bread right now. Not only is it the first no-carb bread I've ever made, its the first time I ever tried to make home made bread of any kind. This should be interesting, looks good so far! It's in the oven, 70 minutes and we will have a verdict!
@hinterwaeldler It is german style bread, so no yeast, very dense, lots of seeds. It is basically flax seed flour, an assortment of whole or crushed seeds, some powdered seed husks (for fiber), salt and some egg whites.
You could probably make it work with less seeds and some yeast if you wanted a more traditional bread but I never tried it so i cant say for sure.
It is pretty much made up of just a bunch of protein and fiber and a negligible amount of carbs (less than a gram in a loaf).
My wife and I have learned in our past explorations of alt-bread making that keeping the "fluff" that it acquires in the oven, after removing it, is a tricky business. It may deflate, don't get discouraged, it IS possible to make absolutely delicious grain-free, barely-carb bread.
Its been a really long time since we have done that actually, your toot may inspire me to revisit some grain free baking. 😀
@TheCryptoconomy this particular bread is german style. So no yeast and no fluff. Pretty much the easiest style of bread to do for a beginning, particularly no-carb. I suspect it will be a success but by the time i move on to fluffy bread it may turn out to be much more of a challenge im sure.
@freemo how did it turn out? I've toyed with a couple of recipes but never found one that wasn't a) too much work/cost, or b) too error prone.
@gentoorebel First one I burned but it was due to me misunderstanding the settings on my oven (I put microwave and oven on at the same time). Second ones came out nice. They are very dense so better suited for some things over others. For example it would make amazing toast, but way too dense to use as a bun for a hamburger. Would also make great crackers, might even work on a sandwich if sliced thin.
@freemo care to share the recipe?
@gentoorebel Well I'm still working on perfecting it. I started with a pre-packed mix (from dr almond). But its basically just nuts, flax seed flour, some fiber powder, water, and egg whites.
@freemo
Picture or it didn't happen
@arteteco ill take a pic for ya shortly.
@freemo I'm intrigued! Care to share your recipe?
@cursesgalore its pre-mix from dr almond. But its just flax seed flour, fiber powder (nut husks powdered), assorted nuts, and egg whites.
@freemo How is this even possible? Ingredients?
