Looks like generally things with protein... I'll try adding another egg and see if that helps. Again, the problem isn't that it's hard(it's a decent texture) it's that it's too crumbly and the insides are not holding together when cut or held. The density though is like that of the desert "bread pudding"(no pun intended) or like a very light fudge.
