Often, to gain #privacy you have to sacrifice speed or user experience. Changing your #DNS server is kind of an exception, though. Unless, you have set up your own private server or you live in a region with poor ping to Cloudflare's servers, 1.1.1.1 seems to be the best solution for privacy AND speed. Although, #Cloudflare is a huge for-profit company, they get audits annually to prove their statement remains true: no IP logs or other user data trading.
