If you're hosting your own local server, yes- otherwise, it's easy to create a new channel/chat. Discord doesn't allow you to host your own server, so you would be just creating the same thing anyway.

Not sure if we're talking about the same thing- I've never heard of anyone paying to use Matrix.

I suppose since you're trying to target a larger audience, using Discord would be the most sensible option. This last reason is enough in itself to justify not using Matrix- so I guess the previous 2 are moot point anyway. Sorry to have wasted your time.
