Past few nights ive been eating about 500 grams of spinach with dinner and 250g skinless chicken... At this rate im gonna overdose on vitamin K...

@icedquinn To be fair lunch bnoth days was a 280 gram cheeseburger... soooo i think ill keep a smile going for a bit :)

With the burger im still net -1500 calories too, not a bad deal.

@freemo I might be inclined to agree regarding pasta but I have some health condition that forces me to eat minimal amounts of carbs. Still getting tests with various doctors, but it's a bit shit when you figure out that pasta is hurting you.

@darth I think id suffer more without the carbs (though i am low carb right now)

@freemo Oh, man, I'd die if I had to eat the same thing every night. If you want some low-carb suggestions to help mix it up, curry is a great choice, as are veggie roasts (basically pot roast without the beef).

@LouisIngenthron yea im all for switching itup.. Problem is I need to find a better source of potassium. Spinach has the most potassium per calorie and still takes 500 grams of it to get to my daily goal.. I need to get some potassium chloride pills.

@freemo Or some diclofenac potassium so you can relax a little easier while you're at it 😜

@freemo Yum! I love spinach, especially when sprinkled with some nutmeg.

@shuttersparks never tried nutmeg on it.. doesnt sound particularly appealing but id give it a go, might surpise me.

@freemo Then it probably will surprise you. That's my secret to getting kids to eat spinach.

@freemo Hmm, nutmeg is critical in various things I make. I rarely use it in sweets except as a topping for egg nog.

For example, nutmeg is pure magic in an onion Bechamel sauce.

@shuttersparks I will have to play with it more.. I know from the past its a picky spice, if your eally taste it its too much and when it does work you dont recognize it as nutmet.. at least thats how it plays out for me.

@freemo Yeah. Nutmeg seems to act more as a flavor enhancer than adding a flavor of its own. But that's my own perception of it. I can sure tell when it's missing from something that should have it.

I was going to say that you need to watch out for iron O.D. with the spinach, especially for folks with heart disease...

@Pat Iron is only 3x daily max, Vitamin K is 27x daily max... Iron overdose is unlikely unless i eat like this long term.

Yeah, the iron issue is mostly for folks who have pre-existing cardio problems. You might want to eat a wide variety of greens -- kale, broccoli, cabbage, etc.

If you cook em and put a sauce on them, you can palate just about any veggie.

@Pat I've been focussing on the spinach mostly for the potassium... not many good sources of potassium that are low in calories and carbs. But yea I will need to switch it up tomorrow.

Potatoes and bananas for potassium, but the bananas have a lot glucose.

Potatoes have 4.2 mg potassium per 1 gram.. you would have to eat 1.1 kg of potatoes to get your daily intake.

There is 3.58mg potassium per gram of banna. You would have to eat 1.3kg of bannas to get your daily intake.|

So I would have to eat 5.5 potatoes (770 calories) or 11 bannans (1,115 calories)...

Neither option is particularly healthy on a diet, and certainly not a low carb diet.

Yeah, and potatoes have another issue, solanine, which often turns up in potatoes and is harmful (poisonous). If you eat too many they can make you feel sick and give you a headache.
Almonds are a good source and a good source of "good" fats (omega-6 fatty acid). But it's difficult to have the will power to only eat a few. πŸ™‚

@Pat Would need to eat 670 grams of almonds in order to reach my daily value. That would be over 3000 calories worth of almonds... not really workable either sadly.

@freemo @Pat So many almonds!!! On a similar note of dangerous amounts of healthy foods, I made the mistake of throwing a bunch of dried kombu/kelp into a soup (not properly preparing it - who knew there were rules?) and then had symptoms of mild iodine toxicity. I didn't even realize that was a risk until I started reading up on it later:

So, watch out for soy milk and seaweed!

There are quite a few edible foods that can kill you if not prepared properly or if you eat too many... Almost all of which are vegetables :)

@Pat @freemo I've never eaten a fiddlehead, but now taking a look at the reports of issues, I think I'll keep that off my bucket list of foods to try. The risk to potential for deliciousness ratio does not seem favorable.

Another one is kidney beans. If you don't cook them at high enough temperature, they'll cause serious gastro issues. So, no slow cookers for those. (I use a pressure cooker for all my beans to make sure the temp gets well above 100C -- plus they cook faster.)

Note: Canned beans are fine because those are already thoroughly cooked by the manufacturer.

They can kill quickly, but it takes a couple of decades for that sudden cardiac arrest to kick in.

I'm careful about that one, too. Not getting enough iodine can be an issue, too, for some people. I don't use iodized salt so I supplement with a tablespoon full of seaweed once a week. But no more than that!

In the USa virtually all satlt is iodine enhanced so it is rarely an issue there. Sucks for back-yard chemists though trying to make chlorine gas :)

For strawberries we are looking at 1.5mg potassium per 1g strawberry. thats 3,133 grams of strawberries to reach my DV on potassium. That is a little over 1,000 calories worth of strawberries... Sounds tasty though.
