I used this a variant of this recipe with some salmon (no sugar, longer bake for larger fish, more pepper), and I could just ruin myself if had the time and money to eat this every day

Great sauce! I had some of this spicy chili sauce, Sambal Olek, at a Mediterranean restaurant of all places and had to get the name. I don't think I can have it as much as I would have Sriracha (tingle factor is a bit too intense for that), but it immediately climbed into my list top sauces

Baked some trout. Covered in kosher salt and sugar over night, wiped off, rinsed off, baked uncovered at 425°F for abt 15min, rotated and back in for abt 10min, on top of oven with the oven on for about five minutes.
I seasoned with black pepper, ginger, sage, olive oil, but no additional salt since it's pretty salty already
it's been too long since I baked a cornbread. seasoned with chili powder, red pepper flakes, and oregano. 😋
it's a but saltier than i recall though. I think I used sea salt previously, but used more finely ground, iodized salt this time. I should convert this recipe to weight measurements...

yep, they are definitely nesting here. apparently a law protects them. I don't mind although I'm worried a call bit about parasites, so I'll probably remove the nest after they've raised their brood for the season
